No man is an island, and we wouldn´t last a day without our loved and trusted suppliers! They are the backbone of our hotels, and we handpick each and every one for their high quality, as well as for their strong sense of responsibility and commitment to doing the very best possible for our planet.

Organic is simply the foundation for all the other considerations we take into account, which include animal welfare, biodiversity, transportation, fair wages and working conditions.

Founded in the 90´s in Guldsmedgade in Aarhus - the same street that saw the first Hotel Guldsmeden open and gave us our brand name - Emmery´s has since the beginning been committed to organic, clean and healthy ingredients, and are still our main bread supplier in all Copenhagen hotels.

Where to even begin with producer of cured meat, Pedrazzoli? Located in Mantova in beautiful Italy, their pigs live free and carefree lives in the forested hills and valleys, contributing to the local biodiversity.

Rytzebækgård

Only in Season – Apples When They’re Meant to Be

We love working with local producers who care about quality, responsibility, and good craftsmanship. That’s why we’re proud to work with Rytzebækgård – a small organic apple orchard on the island of Møn, run by Kirsten Rohde Jensen.

With around 2,500 apple trees and 20–25 beehives, Rytzebækgård grows a variety of rare apple varieties. These special apples aren’t found anywhere else and are grown with great care and respect for nature. 

Kirsten integrates bees into the orchard to ensure optimal pollination, which not only improves the harvest but also supports local biodiversity. Her approach reflects a deep understanding of the delicate balance between plants and insects – and a clear commitment to protecting the surrounding ecosystem.

Is all seafood good food?

Eat more fish! ..is what we´ve always been told. Healthy and more natural than industrialized animal-farming, fish were the answer to many thoughts and questions regarding clean eating. But overfishing, pollution, fish farming and fishing methods have evolved in the wrong direction, and we can no longer assume that all seafood is good food.

With the help of our supplier, Fiskerikajen, we have taken a number of decisions about our choice of seafood, and we prioritize local and wild-caught fish and seafood, that are considerate to our coastline and seas.  

Fiskerkajen have in addition made an annual seafood schedule for us, so that we know what is in season when, and can integrate the most responsible choices into our menus.

Crafted with Care – Chocolate That Tells a Story

Along with coffee, chocolate is one of the resources that is challenged by changing climate conditions, in addition to being a product that is sourced from countries with less organized employer responsibilities. It has always been important to us that these products not only are organic and of a high quality, but that we can have a clear conscience regarding the processes surrounding them.

Organic and biodynamic wines

Founded in 2018, and have supplied us with selected organic and biodynamic wines since then. The wines are produced as naturally as possible, with no—or only very limited—additives, including sulphites. Several of the wines are bottled with no added sulphites at all, resulting in wines with a pure, clean expression of the grapes and terroir.

Danish & Organic spirits

Denmark's only dedicated distributor of locally produced and organic spirits, vermouth, mixers, non-alcoholic alternatives, and syrups. Their focus is on exceptional quality, organic production, and climate-friendly delivery solutions that dramatically reduce single-use packaging through innovative bulk formats. Today, Local Spirits are the primary supplier of local, organic spirits for our hotels in Denmark.

Danish, state-certified organic bakery and our go-to for all glutenfree and vegan breads and cakes - their crispbread in particular is legendary, and pairs beautifully with our homemade salads on the breakfast buffet
